Chicken Enchiladas (Green Sauce)

Simmer cooked chicken in green enchilada sauce for a few minutes.

Lightly spread tortillas with butter and crisp on both sides in skillet.

Place browned tortillas flat in baking dish sprayed with cooking spray.

On each tortilla, put ¼ of the chicken with a tablespoon of sauce. Layer with cheese and diced onions. Roll up and secure with toothpick.

Place enchiladas in baking dish and sprinkle with remaining cheese and onion.

Bake in preheated oven 370 degrees for 15 minutes.

Cover with tomatoes and heated green salsa before serving.

Serve with Mexican rice and dinner salad.
